Red Velvet Sandwich Cookies with Cream Cheese Filling

You love red velvet cake – well now you can have the taste you love in cookie form! These Red Velvet Sandwich Cookies are made using a cake mix, so they’re fluffy and soft. Sandwich two of these cookies together with a sweet cream cheese filling and you’ve got a new favorite cookie to make come Christmas or Valentine’s Day!

Red Velvet Sandwich Cookies with Cream Cheese Filling

THE RECIPE

INGREDIENTS
  • 1 box favorite red velvet cake recipe or mix (15.25 oz.)
  • 2 tablespoons cocoa powder
  • 2 Eggs
  • 1/2 cup butter (1 stick, melted and cooled)
  • Confectioners' sugar (1/2 cup for cookie, 3 cups, sifted, for filling)
  • 1 package cream cheese, softened (8 oz.)

INSTRUCTIONS
  1. Preheat oven to 325°F. Line cookie sheets with parchment paper.
  2. In large bowl stir together cake mix, cocoa powder, eggs and butter until well-combined.
  3. Roll heaping tablespoons of dough into balls and coat in confectioners’ sugar. Freeze cookies 15 minutes. Roll cookies again in confectioners’ sugar. Space 2 in. apart on prepared cookie pan.
  4. Bake 16-18 minutes or until centers of cookies are semi-firm to the touch. Cool cookies on pan on cooling grid 2 minutes. Remove from pan; cool completely on grid.
  5. For filling, in large bowl, beat cream cheese with electric mixer until light and fluffy. Gradually add confectioners’ sugar. Beat on high until smooth. Using spatula, ice bottom cookie with filling. Top with another cookie, repeating until all cookies have been filled.
