These Baked Cauliflower Bites are perfect as a party appetizer, game day snack, or even for dinner with your favorites sides. Spicy hand held cheesy bites that are loaded with flavor and great alone or with a creamy dipping sauce. (Gluten Free & Low Carb).

Baked Cauliflower Bites


THE RECIPE

INGREDIENTS

  • 1 medium/large head cauliflower
  • 1/2 tbsp. olive oil
  • 1 egg
  • 1 1/2 cups Monterey Jack cheese shredded
  • 1/2 tsp. garlic powder
  • 1/2 tsp. onion powder
  • Salt & pepper to taste
  • 2 tbsp. butter
  • 1/3 cup hot sauce



INSTRUCTIONS

  1. Preheat oven to 375 degrees. Generously grease large piece of parchment paper and place on baking sheet.
  2. Bring large pot of lightly salted water to boil.
  3. Break cauliflower into florets and put in boiling water. Cook 5-6 minutes. Drain well.
  4. Pulse in food processor in batches and then lay between paper towels to remove as much moisture as possible.**
  5. Place riced cauliflower in bowl with beaten egg, garlic powder, onion powder, salt & pepper, and cheese. Combine well. Shape into bite size balls and place on greased parchment paper.
  6. Cook 15 minutes and turn over and cook an additional 10 minutes.
  7. Meanwhile melt butter over medium low heat and add hot sauce.
  8. Remove bites from oven and brush with hot sauce mixture. Return to oven and cook an additional 10 minutes.
  9. Remove from oven and can drizzle with additional hot sauce*
