Gluten Free Golden Mango Protein Cookies

THE RECIPE
INGREDIENTS
- 75 grams chickpeas (about a ½ cup), rinsed and drained
- 80 grams dried mango, chopped + ⅓ cup water, soaked overnight
- 3 tbsp AllWhites liquid egg whites
- ½ tsp turmeric
- ½ tsp vanilla bean powder
- ½ tsp baking powder
- Sweetener, to taste if you like a sweeter cookie
INSTRUCTIONS
- Place dried mango and water in a bowl and soak overnight (or a at least a few hours).
- Preheat oven to 350. Prep a baking sheet with parchment paper. Place mango and soaking water in a food processor and pulse until almost smooth. Add remaining ingredients to the food processor and blend until smooth.
- Divide batter into 6 even circles on the baking sheet. Bake for 15 minutes. Remove from oven and let cool on a wire rack.
